Coconut cream fat standardization: 17% vs 22%

Coconut cream fat standardization is the step that fixes what your product is legally called. Under Codex CXS 240-2003, 22% fat sits inside the coconut cream band. A 17% fat product does not. It sits in the coconut milk band, whatever the supplier prints on the drum.

The gap costs money in two directions. Five percentage points of fat is 50 kg of coconut oil per tonne of finished product, worth roughly US$99 at the International Coconut Community CIF Rotterdam price of US$1,970/MT on 15 August 2026. It also moves the product across a viscosity range that Tetra Pak measures from 8 to 260 mPas.

Most buyers write the fat number into the contract and stop. That leaves the more binding half of the spec unwritten.

Does Codex define a 17% or a 22% grade?

No. CXS 240-2003 recognises four classes, and neither 17 nor 22 appears among them. Each class carries a minimum fat figure, a minimum non-fat solids figure, and a total solids band with both a floor and a ceiling.

Read the total solids floor against the two columns beside it. In every row the floor equals the fat minimum plus the non-fat solids minimum. Codex constructed it that way, and that arithmetic is what most buyers miss.

Section 8.1.1 then ties the name to the numbers. It requires the product to be named light coconut milk, coconut milk, coconut cream or coconut cream concentrate “according to the product definitions and composition in Sections 2 and 3”. Composition drives the name. Marketing does not.

What does a 22% fat cream actually have to carry?

At least 27.4% total solids. The cream class demands 5.4% non-fat solids as a separate minimum, so a product standardised to 22% fat has to sit at or above 22 plus 5.4. The ceiling stays at 37.3%.

That single derivation kills a spec line the desk sees monthly: “coconut cream, 22% fat, 25% total solids”. Those two numbers cannot both be true in a Codex-compliant cream. Either the fat is real and the total solids figure is wrong, or the product is a coconut milk carrying a cream label.

Run the same arithmetic on 17%. Called as coconut milk, it needs 2.7% non-fat solids, so the total solids window narrows to 19.7% at the floor and 25.3% at the ceiling. A 17% product with 18% total solids fails the class it is closest to.

The ceiling matters too. A cream at 22% fat may legally carry up to 15.3% non-fat solids, and Section 3.1.2 permits maltodextrin. Non-fat solids can be bought rather than extracted.

Which permitted ingredients change your finished-product claims?

Sodium caseinate is the one to check first. Section 3.1.2 lists it as a permitted ingredient in coconut milk and coconut cream alongside coconut water and maltodextrin. Sodium caseinate is a milk protein.

A manufacturer running a dairy-free claim on the finished pack inherits that allergen from the ingredient. The Codex-compliant supplier has done nothing wrong. The claim on your label still breaks.

Two more additive lines carry cost consequences. Section 4.1 caps sodium and potassium metabisulphite at 30 mg/kg, tighter than several buyers assume from sulphite limits elsewhere in the coconut complex. Section 4.2 caps polysorbates at 1000 mg/kg and sucrose esters at 1500 mg/kg, with mono- and diglycerides and the gums at GMP level.

Clean-label buyers who ban polysorbates should expect to see the emulsion move.

What changes downstream between 17% and 22%?

Viscosity, mainly, and not in proportion. The Tetra Pak Coconut Handbook reports apparent viscosity ranging from 8 mPas to 260 mPas across 17% to 25.1% oil content, measured at 30°C and a shear rate of 100 s⁻¹. Two points of fat near the top of that band do more to your line than five points near the bottom.

The product shear thins across the 15% to 30% oil range once emulsified, pre-heated and homogenised, per Tipvarakarnkoon (2009) and Simuang et al. in the Journal of Food Engineering. Pump sizing done on a 17% sample will not transfer cleanly to 22%.

Stability moves in the same direction. Coconut milk is physically unstable and prone to phase separation because the native protein content is not sufficient to hold the fat globules, which is why emulsifiers and thickeners below 2% are used alongside homogenisation. Raising fat raises the load on that system.

Then the thermal process. Codex sets a pH minimum of 5.9 on all four classes, which puts every one in low-acid territory. Section 6.1 points at CAC/RCP 40-1993 for aseptic low-acid foods and CAC/RCP 23-1979 for low-acid canned foods. No acidified shortcut exists at either fat level.

What does the extra fat cost, and when is dilution cheaper?

Start with the fat itself. Coconut oil traded at US$1,970/MT CIF Rotterdam on 15 August 2026, with Philippine copra at US$826/MT in Quezon, per the ICC weekly series. Fifty extra kilos of fat per tonne is around US$99 at that reference, before extraction yield, processing or packaging.

Now the arithmetic that actually decides the order. One tonne of 22% cream contains 220 kg of fat. Diluting to 17% gives 220 divided by 0.17, or 1.294 tonnes of product. So one tonne of 22% cream yields 1.29 tonnes at 17%.

The decision rule follows directly. Buying 22% and diluting beats buying 17% whenever the 22% price per tonne is below 1.29 times the 17% price per tonne. Freight pushes the same way, since the 17% option ships 29% more gross weight for the same delivered fat, a point covered in more depth in the powder versus liquid landed-cost math.

One caveat cancels that calculation for most buyers. Diluting a commercially sterile aseptic or retorted product reopens it, so the route needs potable water treatment and a validated re-sterilisation step. Without both, the comparison is simply price against price.

Check the fill line as well. Section 7.1.1.1 requires the hermetically sealed container to hold not less than 90% v/v of its water capacity. Buy on declared net weight, not on can format.

What this means for buyers

  • Procurement managers (Persona A): write three numbers into every coconut cream spec. Fat minimum, non-fat solids minimum, and the total solids band. A fat figure alone lets a supplier meet it and still ship a different class.
  • Persona A, claims risk: ask the supplier to confirm in writing whether sodium caseinate or maltodextrin is present. Both are Codex-permitted, and only one of them threatens a dairy-free claim.
  • Importers and distributors (Persona B): if the label says coconut cream, the composition has to support it in the destination market. A 17% product named as cream is a relabelling cost waiting at customs or first audit.
  • Brand owners (Persona C): confirm your co-packer validated the thermal process at the fat level you are buying. A 22% product on a line set for 17% changes heat transfer and viscosity together.
  • Traders (Persona D): quote per kilo of fat, not per tonne of product, when both grades are in play. The 1.29 factor decides most of these trades.

FAQ

Is 17% coconut cream a real grade? It is a real commercial grade, but not a Codex cream. At 17% fat the product falls inside the coconut milk band, which starts at 10% fat. ASEAN suppliers routinely ship 17% to 25% fat, so check composition rather than the product name.

What total solids should a 22% fat coconut cream have? At least 27.4%, and no more than 37.3%. The floor comes from adding the Codex cream non-fat solids minimum of 5.4% to the 22% fat figure. A quoted total solids number below that is not consistent with a compliant coconut cream.

Does higher fat always mean thicker product? Yes within the normal band, though not proportionally. Tetra Pak reports apparent viscosity from 8 to 260 mPas across 17% to 25.1% oil content at 30°C. Homogenisation pressure and pre-heat temperature shift the result substantially at the same fat level.

Can I buy 22% and dilute it to 17% in my plant? Only with potable water treatment and a validated re-sterilisation step, because dilution breaches commercial sterility. Where that capability exists, dilution wins whenever the 22% price is under 1.29 times the 17% price per tonne.

Which document governs if Codex and my contract disagree? Your contract. Codex is the composition reference most coconut supply agreements point to, and national adoption varies by market. The number that protects you is the one written into the specification and tested on the certificate of analysis.
